Dutch Oven Pizza
Dough (make the evening before)
240 grams flour
170 grams water
1 tsp salt
1/2 tsp yeast
1 tbsp olive oil
Mix ingredients together and knead by periodically stretching the dough ball 4-5 times over several 15 minute intervals. The ball will become quite elastic. Let sit in the refrigerator overnight to cold ferment.

Assembling the pizza
Heat the dutch oven to about 425 degrees (10-12 coals on bottom and 15-17 coals on top). Allow dough to warm up about 1 hour and then spread onto a piece of parchment paper. Top with sauce, cheese, and meat, etc. Bake 15-20 minutes until bottom of crust is brown and cheese is bubbly.
