There are certain campsites that are considered unicorns, highly sought after for their location and amenities, often needing to be reserved 11 months in advance. By sheer dumb luck, I was able to grab one of those sites, last minute, at Brunet Island State Park.

Dutch Oven Pork Ribs


1 Rack Pork Loin Ribs
Jar of Rib Rub
1 12 oz can of beer (or cola if you prefer sweeter ribs)
1 16 oz bottle BBQ sauce (KC style, like Sweet Baby Rays)

  1. Prepare the ribs, remove the silver skin and coat liberally with rib rub. Cut ribs apart individually and place in a 12 inch dutch oven.
  2. Pour in one can of beer (or cola) trying not to remove the rub coating
  3. Empty one bottle of BBQ sauce over the ribs
  4. Cover and cook for about 2 hours at 325-350 degrees (Approx 9 coals on bottom, 16 on top). You will need to replace coals halfway through cooking process. Ribs should be fork tender but not falling off the bone.
